Ground Lamb Bowls with Tzatziki Dressing

I’m so excited to share this super easy Greek bowl with y’all. I love ground lamb-it’s such a great source of lean protein! What makes it even yummier is this seasoning from C&J Farms. I love supporting local companies, so I’ve tried a bunch off their seasonings. I have yet to be disappointed!  C&J Farms specializes in homegrown and hand-blended seasonings, without preservatives or artificial ingredients, which makes their flavors super vibrant and clean.

I was really pumped to create this recipe with C&J’s Greek seasoning, because how often do we come across a a blend like this at the grocery store?? I don’t know that I’ve ever seen one! This one made me feel like I was at a legit Greek restaurant – the lamb tasted that delicious. I decided to keep it simple and paired it with some butter lettuce, cauliflower rice, sliced cucumber and tomatoes. I dressed it all in my sister’s Tzatziki Sauce which makes this dish 100% Whole30 approved! I could seriously drink this dressing- it’s so amazing! I love her recipe because you’ll definitely have leftovers to add to salads or dip veggies in throughout the week.

Make sure to check out all of C&J Farm’s seasonings at www.cjfarmstexas.com and use code MADALEIGH15 for 15% off any online order you place this month! Some of my other favorites are the Red Steak Seasoning (Caleb loves grilling with that one) and the Olive Oil Dipping Blend – this Italian girl loves adding this to some olive oil and balsamic to serve with yummy bread as an app when friends come over!

Nutrition per portion

Ingredients
  • 1 lb. Ground Lamb
  • 1 package of Riced Cauliflower (I buy the organic pre-riced packets from Trader Joe's or Costco)
  • 2 Tomatoes, sliced
  • 1 head Butter Lettuce
  • Defined Dish Tzatziki Dressing
  • 1/2 Cucumber, sliced
  • 1 tbsp. C&J Farms Greek Seasoning
  • Salt and Pepper, to taste
  • 1 tbsp. Olive Oil
Method
  1. Prepare the Defined Dish's Tzatziki Dressing and place to side to marinade while you cook your meat.
  2. Heat a large skillet over medium heat. Add ground lamb with 1 tbsp. olive oil. Using the back of a spoon, break apart the meat while it begins to brown. Add a little salt, pepper and your greek seasoning. Cook until cooked through and there is no longer any pink.
  3. I served mine with butter lettuce, a scoop of cauliflower rice, sliced tomato, and sliced cucumber. Top with the tzatziki sauce.
